Crispy Oven Roasted Potatoes

  • 2 pounds small organic red potatoes
  • 1/4 cup extra virgin olive oil
  • sea salt
  • cracked black pepper
  • seasoned salt, if desired


  1. Preheat oven to 375.

  2. Cut potatoes into quarters if small, and eighths if the potatoes are larger.  Place in a large mixing bowl and coat evenly with olive oil.

  3. Transfer potatoes to a large baking sheet and place in a preheated oven.   Stir every 20-25 minutes, and place back in oven.  Continue roasting for 1 1/2 hours or until potatoes reach desired crispiness.  Season with salt and pepper.   Serve.
