Cauliflower Fried Rice

You won’t miss the rice in this fried “rice”!  So much healthier this way!  You can prep all the vegetables ahead of time and then just throw the dish together when you want to eat.  You can buy the cauliflower already prepped if you don’t feel like chopping it yourself, although it is super easy in a food processor or mini chopper.
