These cookies are really easy to make! I always loved peanut butter cookies as a kid and these really remind me of those, but without any gluten, or grains, and with a lot less sugar! They are also dairy free. I used a no stir almond butter for these (Barney Butter with the blue label). This recipe makes 30 cookies. Enjoy!
Almond Butter Chocolate Chip Cookies
Ingredients
- 1 cup no stir almond butter
- 1 large egg
- 6 tbsp organic sugar
- 1 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp fine sea salt
- 1/3 cup mini chocolate chips
- 2 tsp sugar (for sprinkling on top of cookies)
Instructions

Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

In a medium size mixing bowl, stir together almond butter and egg until well combined.

Stir in the sugar, baking soda, vanilla and salt. Add in the chocolate chips.

Drop by rounded teaspoonfuls on baking sheet. Flatten with a fork and sprinkle tops with remaining sugar.

Bake for 11-13 minutes, until set in the center. Allow to cool completely on baking sheet before removing.
