Fajita Chicken Stir Fry

Ingredients

  • 2 large organic chicken breasts, cooked and sliced into strips
  • 1 medium onion, sliced
  • 1 large green pepper, sliced into strips
  • 1 large red bell pepper, sliced into strips
  • 8 ounces fresh mushrooms, sliced
  • 3 tbsp extrra virgin olive oil
  • 1 clove garlic minced, or 1/4 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 to 3/4 tsp sea salt
  • 1 tbsp grass fed butter, or a little more to taste

Instructions

  1. Saute onion and mushrooms in olive oil for 5 minutes, until onions are translucent.

  2. Add sliced peppers and the dry spices.  Saute until the peppers are crisp tender, about 10 minutes.

  3. Add in the cooked chicken and stir until heated through, a few more minutes.


  4. Add in the butter and stir until melted through.   Enjoy!
