Preheat oven to 350 degrees.
Saute onion in olive oil for 5 minutes, add thyme during last 2 minutes of cooking the onion. Set aside to cool slightly.
In a large bowl, combine remaining ingredients. Add slightly cooled onions. Mix thoroughly.
Place into baking pan and shape into a loaf. Bake for 45 minutes to 1 hour until food thermometer reads 165 degrees.
Half way through baking, top with glaze. Combine 3 tbsp organic ketchup and 1 tbsp coconut sugar in a small bowl. Remove meatloaf from oven and top with glaze. Place meatloaf back in oven until done.
Allow meatloaf to cool for 10-15 minutes before slicing.
