Gluten and Grain Free Turkey Meatloaf

Ingredients

  • 1 tbsp olive oil
  • 1/2 large onion, finely chopped about 1 1/2 cups
  • 1 pound organic ground turkey
  • 1/2 tsp dried thyme
  • 2 tbsp almond flour
  • 1 tbsp tomato paste
  • 1 tbsp worcestershire sauce
  • 1 large egg
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 3/4 tsp sea salt
  • 1/4 tsp pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Saute onion in olive oil for 5 minutes, add thyme during last 2 minutes of cooking the onion.  Set aside to cool slightly.

  3. In a large bowl, combine remaining ingredients.  Add slightly cooled onions.  Mix thoroughly.

  4. Place into baking pan and shape into a loaf.  Bake for 45 minutes to 1 hour until food thermometer reads 165 degrees.

  5. Half way through baking, top with glaze.  Combine 3 tbsp organic ketchup and 1 tbsp coconut sugar in a small bowl.   Remove meatloaf from oven and top with glaze.  Place meatloaf back in oven until done.

  6. Allow meatloaf to cool for 10-15 minutes before slicing.
