If you are a chocolate lover, you have to try this recipe! This dessert is rich and dense and no baking required. It is gluten and grain free, and also vegan if you sub out the butter for a vegan butter spread, such as Earth Balance. I make these in little four ounce canning jars. These are very rich, so small portions work great for this recipe.
Decadent Chocolate Cups
- 8 ounces 70% dark chocolate
- 2 tbsp organic butter
- 1 13 ounce can full fat organic coconut milk
- 1/2 tsp vanilla extract
- 1/8 tsp fine sea salt
Melt chocolate and butter in a double boiler, or in a bowl over simmering water.
Add coconut milk and stir until fully incorporated. Add vanilla and sea salt.
Portion equally into 10 small jars or bowls. Cool on counter until chocolate mixture reaches room temperature. Cover with a lid or plastic wrap and place in refrigerator for 4 hours or more to chill. Enjoy!
