This is one of my family’s favorite sides! These potatoes are so easy to make. It is really more of a method than a recipe. The only secret to the success of this recipe is patience! Just plan ahead, they take about an hour and a half to make. You have to give them plenty of time in the oven to get crispy. I usually use organic red potatoes for this recipe. Coat them in plenty of olive oil and stir about every 20 minutes, so they crisp up evenly. So simple and tasty!
Crispy Oven Roasted Potatoes
- 2 pounds small organic red potatoes
- 1/4 cup extra virgin olive oil
- sea salt
- cracked black pepper
- seasoned salt, if desired
Preheat oven to 375.
Cut potatoes into quarters if small, and eighths if the potatoes are larger. Place in a large mixing bowl and coat evenly with olive oil.
Transfer potatoes to a large baking sheet and place in a preheated oven. Stir every 20-25 minutes, and place back in oven. Continue roasting for 1 1/2 hours or until potatoes reach desired crispiness. Season with salt and pepper. Serve.
