Avocado Lime Popsicles

What is summer without popsicles! These have a great lime flavor and a nice creamy texture thanks to the avocado,  but they do not have a strong avocado flavor.  (Your kids won’t even know it is in there!)  I originally got a version of this recipe from my sister, and although they were very good,  I wanted to cut down on the sugar from the original recipe.  I added grapes for some sweetness, and cut way back on the sugar.   I also threw in a small handful of spinach to make them a nice color!  Don’t worry, you won’t be able to taste the spinach either!  I used a high speed blender to make these, but I think any blender or food processor will work.

Avocado Lime Popsicles

Ingredients

  • 1 cup water
  • 1/3 cup organic sugar or honey
  • 1 cup organic green grapes, halved
  • 2 tbsp organic lime juice
  • 1 tsp organic lime zest
  • 1 small ripe avocado
  • dash sea salt
  • small handful fresh spinach (optional)

Instructions

  1. Heat water and sugar (or honey) in a small saucepan until sugar dissolves.  Set aside to cool.

  2. Add all ingredients into a high speed blender or food processor and blend until very smooth.

  3. Pour mixture into popsicle molds and freeze until solid, at least six hours.  Enjoy!
